PINEAPPLE AND KALE SMOOTHIE

Ingredients (serves 2)

  • 2 cups kale leaves, chopped and lightly packed, stems removed.
  • 3/4 cup unsweetened vanilla almond milk or any other milk you like
  • 1 frozen medium banana, cut into pieces
  • 1/4 cup fat-free plain Greek yogurt
  • 1/4 cup frozen pineapple chunks
  • 2 tablespoons creamy or crunchy peanut butter
  • 1 to 3 teaspoons honey


Preparation

  • Place all the ingredients (kale, almond milk, banana, yogurt, pineapple, peanut butter and honey) in a blender in that order.
  • Mix until smooth. Add milk if necessary to achieve desired consistency. Enjoy immediately.


Additional tip

  • This kale smoothie is best just after blending, but can be stored in the fridge for up to 4 hours (for good results) or up to 1 day (for less optimal results).
