
Ingredients (serves 2)
- 2 cups kale leaves, chopped and lightly packed, stems removed.
- 3/4 cup unsweetened vanilla almond milk or any other milk you like
- 1 frozen medium banana, cut into pieces
- 1/4 cup fat-free plain Greek yogurt
- 1/4 cup frozen pineapple chunks
- 2 tablespoons creamy or crunchy peanut butter
- 1 to 3 teaspoons honey
Preparation
- Place all the ingredients (kale, almond milk, banana, yogurt, pineapple, peanut butter and honey) in a blender in that order.
- Mix until smooth. Add milk if necessary to achieve desired consistency. Enjoy immediately.
Additional tip
- This kale smoothie is best just after blending, but can be stored in the fridge for up to 4 hours (for good results) or up to 1 day (for less optimal results).
